Guadalajara family recipes, a Waco farmers market start in 2015, and a downtown restaurant where tacos and community meet.

From market pop-up to Franklin Ave

Sison Tacos is a family-run Mexican restaurant in downtown Waco. Edgar Gomez's parents came from Guadalajara, Jalisco, and started serving at the Waco Downtown Farmers Market in 2015, serving tacos, aguas frescas, and food made together as a family.

Edgar took over the business as a teenager, rebranded it as Sison Tacos, and grew a following through catering, events, and a food trailer before opening the brick-and-mortar at 601 Franklin Ave in late 2025, in the historic Praetorian building, formerly home to Brû Artisan Coffee Works.

Today we serve Guadalajara-style tacos with handmade tortillas, fruit waters in our signature bags, and breakfast favorites made in-house, with the same care whether you dine in, grab takeout, or book us for catering.

How we got here

  1. 2015

    Farmers market beginnings

    The Gomez family started serving at the Waco Downtown Farmers Market with recipes rooted in Guadalajara, Jalisco: tacos, aguas frescas, and food made together as a family.

  2. 2018

    Food trailer era

    The family expanded with a small food trailer, building a following at local events, pop-ups, and spots around downtown Waco.

  3. 2023

    A new chapter

    Edgar Gomez took the reins, rebranded the business as Sison Tacos, and focused on social media, catering, and a fresh downtown presence.

  4. 2025

    Franklin Avenue storefront

    Sison Tacos opened its brick-and-mortar at 601 Franklin Ave in the historic Praetorian building, a permanent home for the tacos Waco had already come to know.

More than a restaurant

Sison Tacos hosts a weekly chess club on Tuesdays at 6:30 PM for tacos, community, and a place to gather downtown. We cater for Baylor events, local companies, and celebrations across Waco, and we are proud members of the Startup Waco network.

Edgar Gomez built Sison with a focus on branding, hospitality, and giving other local businesses a place to start. Yes, we are a restaurant, but we are also part of the community.
